The owls' eyes are in the front part of the head, not on the sides. Eyes are fixed and immobile within their sockets. So they turn their head around to see and they can do so almost till 270°. The key is in the adaptations both in their vertebrae and blood system which prevent the arteries from strangling when the neck is turned round.
